Chipotle Lime and Cilantro Chicken bites


Easy chicken recipe with added flavor and detox. Serve with cauli rice or any of our vegetable sides for a quick and tasty, filling dinner.


KITCHEN ITEMS YOU'LL NEED

  • Baking dish (I use glass, porcelain, silicone or stainless steel) Avoid using non-stick baking dishes or aluminum bakeware to avoid toxins leaching into your food.

  • A flat stainless steel cookie sheet or cookie pan that would fit over top of the baking dish. I use this as a "lid" to keep the chicken moist. Without it, you will have hard crusty chicken pieces that allows all of the moisture out of the chicken.

  • Citrus Juicer (This is the one I use)

  • Stone or glass cutting board

  • Stainless Steel kitchen knife

  • Silicone Spatula

  • Herb stripper (optional) - BUY HERE


INGREDIENTS

  • 3 pasture raised chicken breasts (If you do not have access to pasture raised, "organic free range" is the next best thing).

  • 1 bunch of organic fresh cilantro (not dried)

  • 1/3 cup of COOC Olive Oil Cold Pressed (See my list of approved Olive Oils HERE) I personally use California Olive Ranch.

  • 2 organic limes

  • 1/2 teaspoon celtic sea salt OR pink himalayan salt (finely ground)

  • 2 Tablespoons of the "Phaze Chipotle Taco Seasoning" (my gluten free, mold safe homemade taco seasoning blend).


INSTRUCTIONS

  1. Preheat oven to 350 degrees

  2. Wash cilantro and limes in filtered water.

  3. Using the cutting board and knife cut either thawed or frozen chicken into 1 inch squares. I prefer to cut the chicken when it still semi-frozen because the chicken comes out better in perfect sized squares. Once the chicken is cut into cubes place the chicken into the baking dish.

  4. Using a citrus juicer, juice the 2 limes over the chicken.

  5. Using an herb stripper remove the leaves of the cilantro and discard the stems. If you do not have an herb stripper, you need one in your life (ha ha), but if you do not have one you can simply pull the cilantro leaves off of the stems and discard the stems. Place the cilantro leaves evenly over the chicken.

  6. Measure 1/3 cup of the olive oil and drizzle it evenly over the chicken

  7. Lightly spread the salt and "Phaze Chipotle Taco Seasoning" evenly over the chicken.

  8. Using the silicone spatula slowly turn and blend the chicken until all of the ingredients are well incorporated.

  9. Place the baking dish into the oven and place the flat cookie sheet or cookie pan upside down on the flat side to serve as a lid to hold the moisture inside.

  10. Bake at 350 degrees for 25-30 minutes then remove from heat.


TIPS

Chipotle Lime and Cilantro chicken bites go great with cauliflower rice or if you are in Phazes 1 or 8 brown or jasmine rice are approved. The chicken can also go great in any of our approved tortillas or flatbreads that correspond with the current Phaze you are in. Be very careful not to eat flatbreads or tortillas that are not approved for your current "Phaze".
