This is a basic banana bread recipe that removes the processed sugars. Avoid this recipe on Phazes 2-7.
Confession: Before I was "mold-sick" I owned a bakery!! Yes....I know...terrible, terrible. However..this also gives me the ability to really throw down on some baking favorites and know how to take out some harmful ingredients that I need to adapt to my new healthy eating lifestyle.
Words of caution: If you are really sick you'll want to avoid this recipe altogether because frankly, gluten flour does not agree with most people but the reason I posted the recipe was because this is just Phaze 1 and sometimes people need to transition slowly into eating sugar-free or gluten-free and it's just so darn difficult. If you still want to try the recipe but avoid the sugar AND the gluten you can replace the flour with a 1:1 gluten free flour.
KITCHEN ITEMS YOU'LL NEED
Stainless Steel, Silicone OR Glass bread loaf pan (Do not use aluminum bakeware) 9X5 is the size we used in this recipe.
Stainless Steel or Glass mixing bowl (Do not use wood or plastic bowls)
Silicone Spatula (Do not use plastics)
INGREDIENTS
2 "pastured" eggs, beaten (We love Vital Farms pastured eggs)
1 Tablespoon 100% pure vanilla extract
â…“ cup full fat coconut milk or (unsweetened almond milk, or unsweetened oat milk, or unsweetened hemp milk)
½ cup or 1 stick of unsalted grass-fed butter
6 organic bananas (4 will be mashed and the other 2 are set aside for garnish on top)
1/2 c raw unfiltered honey (not pasteurized but raw only)
1/2 teaspoon organic cinnamon
1/8 teaspoon organic nutmeg
1 ¾ cups all-purpose wheat flour (Or to avoid gluten use a cup for cup gluten free flour)
1 teaspoon baking soda
½ teaspoon celtic sea salt
½ cup organic chopped pecans or walnuts
INSTRUCTIONS
Preheat oven to 325 degrees F (165 degrees C). Spray one 9x5 inch loaf pan with non-stick spray coating.
Blend together the eggs, non-dairy milk, grass-fed butter, vanilla, RAW Honey and ONLY 4 bananas.
Add in the cinnamon and nutmeg and mix well again.
Sift together the flour, baking soda and sea salt. Add to banana mixture and stir in pecans. Mix well.
Pour into prepared loaf pan
Cut the remaining 2 organic bananas into slices and place them on top of the batter. For added flavor I like to also sprinkle MORE cinnamon on top once the bananas are sliced.
Bake batter for 1 hour and 20 minutes or until a cake tester inserted in the center comes out clean.
