KITCHEN TOOLS YOU'LL NEED
Glass or stone cutting board
Stainless Steel knife for cutting
2 stainless steel frying pans
Silicone or stainless steel turner
Avocado cutter or large spoon to remove avocado
Large soup or cereal bowls
INGREDIENTS
2 cups of organic sweet potato: peeled and cubed
2 Tbsps real maple syrup
1 dash of organic nutmeg
1 dash celtic sea salt
1 teaspoon organic cinnamon
4 Tbsp of coconut oil (divided into 2 Tbsps each)
4 pasture raised eggs
Dash of "everything bagel" seasoning
1 organic avocado
1 full leaf of organic kale
1 sprig of organic green onion
INSTRUCTIONS
Rinse sweet potatoes in filtered water and with a vegetable peeler, peel the sweet potatoes and set aside.
Turn the stove top burner on med heat and add 2 Tbsp of coconut oil to the pan.
Immediately add the maple syrup, nutmeg, sea salt and cinnamon to the heating coconut oil to form a sauce.
Add the sweet potatoes to the frying pan and cook, stirring every few minutes to brown the potatoes.
Sweet potatoes should cook for 8-12 minutes or to your look and texture.
While sweet potatoes are cooking, rinse your kale and green onion in filtered water.
Using your cutting board and knife slice your avocado, chop the kale and slice the green onion.
When sweet potatoes are done drop them in a large bowl or (plate is fine).
Place the other frying pan over medium-high heat. Once the pan is hot, add the coconut oil (or grassfed butter if you prefer) and allow it to melt. Swirl the oil around so it is fully coating the pan.
Add the chopped kale to the frying pan and saute it for 1-2 minutes or until soft. Add this on top of the sweet potatoes. Because I like my "over easy" egg on top to be nice and hot I usually save this for last.
Crack each egg into the pan slowly, being careful to not break the yolk. Sprinkle with a dash of pink himalayan or celtic sea salt.
Cook for 1 to 3 minutes or until the whites are almost set but remain a bit clear on top. Using your silicone spatula, gently slide the spatula underneath the eggs and carefully flip. If you are worried about being able to do it you can always separate the eggs with the spatula and then flip them one at a time.
Cook the other side for an additional 30 seconds and then put the eggs on top of your sweet potatoes.
Add the sliced avocado to the bowl as well as the green onion.
For a little extra "jazz" I like to sprinkle mine with a little "Everything Bagel" seasoning which you can find in most stores.
