Sugar-Free Fruit & Nut Bites

These energy bites are made with gluten-free oats, nuts, seeds and dried fruit and natural sweeteners. They are a healthy snack rich in nutrients and perfect for on-the-go snacking. gluten-free + sugar-free

KITCHEN ITEMS YOU'LL NEED

  • Food Processor

  • Glass or Stainless Steel mixing bowl

  • Measuring Spoons

  • Measuring Cups

  • Silicone spatula


INGREDIENTS

  • 1 1/2 cups Dates

  • 1 1/2 cups Dried Cranberries

  • 2 tbsp Maple syrup or raw honey

  • 2 cups Organic Gluten-Free Oat Flour

  • 1 tsp Organic Cinnamon

  • 1/2 tsp Celtic Sea salt

  • 1 tbsp Sesame seeds

  • 1 tsp Poppy Seeds

  • 1/4 cup Almonds

  • 1/4 cup Coconut, unsweetened

  • 1/4 cup Organic Pepitas

  • 1/4 cup Organic Walnuts

  • 1 tsp Vanilla

  • 1 tbsp melted Coconut oil

INSTRUCTIONS

  1. Place oat flour, sesame seeds, poppy seeds, coconut oil, maple/honey, vanilla, cinnamon and sea salt in a bowl and set aside. Toss to combine.

  2. Add almonds, walnuts, pepitas and coconut to a food processor with the chopping blade and process until the mixture is completely chopped.

  3. Add in dried fruit to the same food processor that contains the nut and seeds blended. With the chopping blade process until the mixture is completely chopped.

  4. Dump the mixture from the food processor into the bowl with the oat flour mixture and use a silicone spatula or your hands to combine everything together.

  5. Once combined, form bites into balls. Place on a baking sheet lined with parchment.

  6. Enjoy right away or store in the fridge for later. Store for only 1 week in the fridge or 1 month in the freezer.
