Phaze Waffles

Updated: Mar 5, 2022

Grain-Free, Gluten-Free, Dairy-Free, Sugar-Free, Moldy-free waffles for all 8 Phazes!!

My customized grain free waffle that’s almost cake-like inside, similar to Belgian waffles. Perfect for breakfast or a snack.

Makes 4-6 servings

KITCHEN ITEMS YOU'LL NEED

INGREDIENTS

1st bowl:

  1. 1-1/2 cups unsweetened almond, coconut or hemp milk (your choice)

  2. 1 Tbsp fresh squeezed organic lemon juice mixed together with 1/2 tsp baking soda to form a paste. Mix these two together in your small dipping bowl and set aside.

  3. 1/8 tsp 100% pure monk fruit (warning!: Pay attention, make sure you are buying 100% pure monk fruit and NOT monk fruit with added "Erythritol". Erythritol is derived from moldy corn!!!

  4. 2 tsp pure vanilla extract

  5. (Good fat) 1/4 cup grassfed butter (melted) OR grass-fed ghee OR cold pressed organic coconut oil OR an approved COOC Olive Oil Here from the list

  6. 1 pastured egg

2nd bowl:

INSTRUCTIONS

  1. Heat waffle iron. I spray mine a little with "avocado oil spray" (do not over spray your waffle iron. It just needs a slight mist of oil on it)

  2. In 1st mixing bowl, using your wire whisk, whisk together the first 6 ingredients: Non-dairy milk, baking soda/lemon juice paste, monk fruit, vanilla extract, butter and egg. Whisk thoroughly. Set aside.

  3. In a 2nd mixing bowl, blend together the last 5 ingredients: almond flour, coconut flour, psyllium husk powder, flax meal and salt. Blend thoroughly using your silicone spatula.

  4. Pour the 1st bowl (wet ingredients) into the 2nd bowl (dry ingredients) and stir just to combine (don’t over mix or the waffles won’t rise).

  5. Pour just enough mixture into the waffle maker and cook according to your manufacturer’s sized directions. Most standard waffle makers take approximately 1/2 cup of batter, so you can use a measuring cup if you'd like.

  6. Close the waffle maker and cook each waffle for 8-10 minutes.

SERVING SUGGESTIONS

  • Avoid artificial syrup, maple syrup, molasses, jelly, fruit syrups (on Phazes 3, 4, 5, 6) Maple syrup and molasses may be used ONLY in Phazes 1 and 8.

  • Raw Unfiltered Honey can be used in moderation (up to 2 tsp per serving) for all 8 phazes.

  • Coconut whipped cream can be a great topping

  • Can be served with approved fruits for the current Phaze you are in. Pay close attention to what Phaze you are currently in, as you do not want to exceed consuming fruits that are high in sugar if you are in critical Phazes of your detox. Ex: for Phaze 4 blueberries, raspberries, blackberries, mango or green apple are the approved fruits in moderation.

STORAGE TIPS:Good news!! Waffles can be premade and frozen. DO NOT make waffles and store in the refrigerator, as storing leftovers can cause mold to grow overnight and increase histamine levels in foods.

You can try coconut flour? I have not tried it with these so if you use it it would be somewhat of an experiment.

Hey guys!! I'm Jennifer.  I was exposed to toxic mold 10 years ago and struggled my way through detox.  I created this site to help other mold sufferers follow a "mold detox diet" successfully.
