Marinated Grass-Fed Steak over greens

A delicious grass-fed fresh-herbed marinated steak on top of your favorite garden greens. Steak marinade is the key to tenderizing and flavoring any steak but this recipe calls for only whole food organic herbs and spices that take only 30 minutes to marinate. This will make it a favorite for weeknight dinners because it doesn't take a lot of prep work in the kitchen.

KITCHEN ITEMS YOU'LL NEED

  • Cutting board and knife to cut and mince herbs and vegetables

  • Glass or stainless steel bowl

  • Glass or stainless steel baking dish

  • Grille or portable cast iron grille skillet

My Recipe Serves 2 or if you eat small meat portions it can serve 4 people or 4 servings

INGREDIENTS

  • (2) 15-oz. beef sirloin steaks

  • Sea salt

  • Cayenne Pepper

INGREDIENTS FOR THE MARINADE

  • 1 cup extra virgin olive oil (See Olive Oils approved for the PhazeMoldDiet HERE)

  • 3 organic garlic cloves, minced

  • 2 tbsp. fresh organic red bell pepper minced

  • 2 organic shallots, minced

  • 3 tbsp. fresh organic basil, minced

  • 2 tbsp. fresh organic leaf parsley, minced

  • 2 tbsp. fresh organic rosemary, roughly chopped

  • 2 tbsp. fresh organic thyme, roughly chopped

  • 2 tsp. dried organic oregano

  • 3 tbsp. organic lemon juice

  • Sea salt

  • Cayenne Pepper (dash)

INSTRUCTIONS

  1. In a bowl, combine all the ingredients for the marinade and season to taste.

  2. Pour half of the marinade into another container. Add the steaks, and marinate for 20 minutes at room temperature.

  3. Preheat a grill or skillet over a high heat.

  4. Cook the steaks for 5 to 7 minutes per side for a medium-rare steak, 8-10 minutes per side for a medium-well steak or 11-15 minutes each side for a well done steak (or adjust to your preferred doneness level).

  5. Spread the remaining marinade (the half that you didn’t use for the steaks) over a cutting board, and press both sides of each steak onto the marinade-covered board to pick up the herbs.

  6. Slice the steaks and serve well coated with the marinade.
